Olio Novello is bottled directly after milling and made available to the public in the fall for early season enjoyment. Fresh, bright, and bold, enjoy this oil within a few months after harvest. We are proud to celebrate the Center’s mission, in collaboration with the Olea Learn students, to serve the research and education needs of olive industry as a self-supporting university and industry coalition that is building California’s crop of the future.
